According to your description, I understand that you would like to setup
the Exchange Server for multiple SMTP domains (e.g. @thielen.com and
@windward.net). If I have misunderstood the problem, please don't hesitate
to let me know.
Yes, we can configure the Exchange server to receive e-mails from multiple
domains. For example, a user A can receive e-mails from both
us...@thielen.com and us...@windward.net. To do so:
1. Start Exchange Systems Manager.
2. Click to expand the Recipients container and then click Recipient
Policies.
3. Open the properties of Default Policy that is displayed in the right
pane.
4. Click the E-Mail Addresses tab, click New.
5. Select SMTP Address, click OK.
6. Type any additional SMTP addresses that you want the Exchange-based
computer to host, for example, @windward.net and click OK.
7. Select to check the new SMTP address. Make sure that @thielen.com is the
primary address (When you send e-mail to Internet recipients, the "From"
address which the Internet recipients will see is what you set as "Primary
Address"). Click OK.
8. In Exchange System Manager, expand Recipients -> Recipient Update
Services, and then right-click any Service listed in the right pane to
choose "Update Now".
NOTE: The user account who has been unchecked the option "Automatically
update e-mail address based on recipient policy" will not receive the new
added Recipient Policy. You should add the e-mail address for those users
manually.
9. Run services.msc to bring up the Services Management console, locate
"Microsoft Exchange System Attendant" and then click Restart.
NOTE: This step is recommended since recipient policy will be updated
immediately after the SA service restart. Otherwise, it may take a while to
implement the changes. Please also add the appropriate MX and A records to
point to the Exchange Server.

Method 1: We can manually change the specific users' E-mail addresses,
after we created the appropriate Recipient Policies based on my previous
reply:
1) Open the Server Management Console, go to Users, double-click the
appropriate user accounts.
2) Click E-mail Addresses tab, un-check the 'Automatically update e-mail
addresses based on recipient policy' check box, then highlight the
appropriate email address and click Remove, then click Apply (e.g. remove
ta...@windward.net email address from tanya user account's Properties).

Answer: You can open the appropriate user's Properties in the ADU&C (Active
Directory Users and Computers), and click Exchange General tab, click
Delivery Options button, enable "Forward to" option and click Modify to add
an appropriate account, and then choose the "Deliver messages to both
forwarding address and mailbox" option.
