Best practice for separating our warehouse users and servers/desktops

We have a warehouse with 50 desktops and over 100 printers that are used to print 100k of labels per day. Those mostly have access to our print server and to exhcange. I would like to separate them out because the network traffic is very slow.
What would the best practice for this work. They will still need access to the 2 servers but not the rest of our network. Can i set them up on either a separate VLan or use a completely different switch for only those in the warehouse. Should I also then configure a second nic with different subnet on the two servers I need access too and add them to the vlan and or switch. Or do I just create a separate vlan for the warehouse and just tag the two servers I need to work on both vlans?
