Changing Training Texts

Hi, I am new to the use of SDK and this forum, but we are looking at the idea
of using the MS Speech Recognition for students who are having difficulty
with writing and spelling. The idea of using speech input seems great, but
the training text provided as standard, and all those that load with the SDK,
all seem way to high level for these students.
How easy is it to create new training texts, and where are they stored when
installed? (I am using XP and think that most of our clients will still be on
XP as well, so anything we do will need to be on that OS)
