Is it possible to configure SUS to only download and host updates for the OS
and apps that you actually use? Currently on installation we get all the
updates for all the products and have to sift through them to find and
approve the small no we actuall want.

Sorry, but no. You specify the language you want to support and SUS will
sync all patches that apply to the language.

Yeah, the filtering in SUS is really extremely limited. You should also be
aware that even with language filtering being your only filter option, you
will get every language version of the .NET Framework and SharePoint
updates even if you don't use them at all in your network. You can't
delete the unwanted updates because they will come back the next time you
sync.
