just have a look at the official system requirements:

Required OS:
Microsoft Windows Server 2003 Standard Edition, Windows Server 2003
Enterprise Edition, Windows Server 2003 Datacenter Edition or Windows
Server 2003 Web Edition later plus service packs. Windows SharePoint
Services 3.0

You could use Virtual PC (which is free) to run a virtual machine
having the required OS installed.

There's also a pre-installed MOSS 2007 image available from Microsoft:

Quick question...but I think I know what your going to tell me. I've already
got SQL2005, VS2005, Office 2007 installed on my Vista Ultimate OS. Do I have
to install all of these again in the virtual machine running Windows 2003
Server? I would guess yes.

You should be able to access them from the VM and not need to install them
