In Outlook 2003, if you define custom fields (AKA user-defined fields) 
inside Contacts or Tasks, how do you update their values? Via the LIST view, 
meaning when it's a list of rows. You drag the column name representing the 
user-defined field to the list, then you go into that particular row, then 
you go into that particular "cell" where the user-defined field exists, and 
you change the value! Very easy. You don't have to add the user-defined field 
to the form (the singular row screen) to get to the user-defined field value. 
Well, the same WAS true of Notes. Notes are simply a "sticky", meaning there 
are no fields on the single view form. Just ... "sticky". So how do you 
change the value of a user-defined field on a Note? Same as the others, you 
lists your notes, then you go to the row and user-defined field of that 
particular note and change it there.
Well, in Outlook 2007, to which I converted everything, I added my 
user-defined field columns to Notes, and then I CAN'T CHANGE THEIR VALUES! 
EVER AGAIN! NOT GOOD!
OK... forget everything I typed and think of it this way. HOW DO YOU CHANGE 
THE VALUE OF USER-DEFINED FIELDS IN NOTES IN OUTLOOK 2007? That's easier! 
(LOL!)

That's my simple question. You're able to assign user-defined fields to 
notes, how do you change their values?

I had no idea what "in line editing" was. Somehow, MANY years ago, I had 
figured out how to turn that ON for NOTES! 4 years later, no recollection.
For some strange reason, Microsoft had the wisdom (????) to "turn on" in 
line editing automatically for Contacts and Tasks, and yet NOT Notes! (I have 
customized "SORT" fields on all three entities.)
