Locking Paragraph Styles

I create a custom paragraph style (numbered with my tab settings).
Applying that style to another paragraph later in the text causes the
numbering to continue instead of restarting.
Optioning to restart numbering causes the formatting to be
automatically changed to Word's tab settings (which are too much within
a table cell).
Every which way I approach setting things back to my preferences does
not resolve the issue. Next application of the paragraph style to
another paragraph initiates Word's preferences again.
Word for Office 2010
Word for Mac 2011
