Right- or ctrl-click the tab and choose a color from the Section Color
popup.

Wild speculation--there's an issue, in that I think Office/MS really
aims for people with a "hey, what happens if I right-click?" mentality
to be rewarded with the right answer, and that mentality is not so
common on the Mac, maybe.
Why? That it is text formatting. Want to format the tab, right click on the
tab!
