Well it depends on your setup.
With an Exchange account, you could do it all through Exchange.
Without one, you can use SyncServices to sync the address book and
calendar to the system Address book and iCal, then from then on, either
sync through iTunes or MobileMe.

Corentin is right. You just sync through iTunes and it will sync
contacts, Calendar and Notes. However, only the first two will sync to
Entourage. Notes syncs to Apple's mail notes. The first thing I
purchased so that I would have task and sync of Notes to Entourage is
Missing Sync for the iPhone from Markspace. it uses two programs to do
this Fliq Notes and Fliq tasks. They are good and like iTunes uses
sync services to sync to the Mac. Now to get your info into Entourage
go into Entourage prefs and turn on sync. Use the combine method. I
have found because there are so many sync issues with Entourage its
best to just be sync'g one module at a time as it reduces errors but
not totally. You can try mulitple modules and see what happens or one
or two at a time to see how it goes. Make sure you have backups. There
is a lot of support documentation at Apple.com to fix sync errors and
mess if it occurs. I can help you out of that if you run into a
