First, we recently released version 10, which comes with Dojo 1.8.3. That's your best option.
However, if you do want to update the version of Dojo that is used, you can find that in the davinci.dojo JAR. Should be straight forward to unzip that, replace the version of Dojo (use the compressed/compiled version, for performance) and zip it back up.
Since it's going from 1.8 to 1.8.3, the Dojo changes should be minimal. But do note that some of the code, particularly the metadata and helper files also found in davinci.dojo, may break from changes to the Dojo code...
