When you plug the limit switches in backwards, you short the 5V power to
ground instead of the intended signal line to ground. This means no more
power to the Arduino and thus no more signal to the MOSFETs that control
the heaters. Also, not a good thing for the USB on your PC which may
potentially be supplying the 5 volts.
