I think that's Preferences -> Editor Defaults.
By the way, I come from Eudora too, even having contributed bits
and pieces to Eudora in its earliest incarnations.
Still, I'm stunned by your move back to it; even though I still
like Eudora, it did pass on a few years ago. For me, it started
becoming unstable up to the point of being unusable, and nothing
I tried resolved that instability. Since then, three major OS
and one architecture change have occurred, and Eudora has not
kept up. Mailsmith did, and honestly, the state of mail
software in general is quite pathetic, even for the Mac; with
that in mind, nothing comes remotely close to Mailsmith, and
that is considering all its lackings (IMAP) and suboptimalities.
That's my $.02, YMMV. Have the best of times with Eudora, she's
been a great one for as long as it lasted for me too.
