2 issues: Default Categories and Quantity option aren't working.

Hi, i've been searching around hours with no luck, when i assign in CPT the taxonomy 'Categories' and then 'Set Default Categories' and select some of them (e.g. Parent Category and its Child One and Child Two), all the categories in New Post are showed, is there any way to hide/exclude the others?

DEFAULT CATEGORIES
E.g. I just want to assign 'Category 3' (and their children) to a Custom Post Type. The Category 1 and 2 need to be hidden.

-Category 2
|
-Category (Parent) 3
|
--Child Category 1
|
--Child Category 2

QUANTITY
i'm guessing why if i set up my CPT like a 'page' and check the 'Quantity' option it hides 'Show All Posts' and let 'Add More Posts' when in theory it's viceversa?.
