Golden and flavorful chicken stock
Who says local food isn’t available in the winter? See how easy it is to cook with Dane County Winter Farmers Market produce in February. Local chef Jeana Ruland takes us on our local food journey, teaching knife skills along the way and how to improvise with what is available for your recipes.
Learn how to efficiently cut up a chicken, then take the meat off of the bones. We will make chicken stock and use the meat to make a rustic version of quenelles (similar to sausage). Jeana will make a trip to the Dane County Winter Farmers Market that will decide what ends up in the soup. See how well we can cook and eat using local ingredients during the winter, too!

Jeana Ruland was trained by prominent Chef-Instructor, Madeline Kamman, at her renowned cooking school. Here she learned about the big picture of food and that you don’t need a large professional kitchen or a long shopping list of exotic ingredients to make great food. Jeana’s approach to food is that if you have good technique you can make great food with whatever you have on hand.
