Before the last update I could convert bearings using →HMS and →HR but
I can't seem to find that function anymore.
Has it moved or gone completely? Can I reinstate the old version?

Those functions are still there.
While in the convert menu (SHIFT->CONVERT) you can press the down arrow twice to bring up ->HMS and ->HR functions. The new unit convert functions are now the first things you seen in the convert menu.
If you use these functions frequently you can always assign them to the custom menu.
No, you can not revert back to old versions. It's an iTunes thing.
