I did it with the Daytona. I though that riding at low speeds in tight corners would be easier on that bike. The course is subtitled "Skills for Sport Bikes" but there were only 3 or 4 sport bikes. There was a Ninja 250, a Honda Goldwing, a Kawasaki Vulcan, and a woman on a Honda Silver Wing scooter. One woman used one of the school's bikes--a 250 CC Suzuki standard. She is the only person who crashed. After she rested a while, she was back out riding.
They do insist that your bike be properly licensed and insured. One of the class participants had a bike that he brought to CA from Utah, but they wouldn't let him register it in CA because it didn't have enough miles on it to bring it in as an non CA legal out of state motorcycle, so it wasn't
eligible to be registered or insured in CA. Without insurance, they wouldn't let him do the riding portion of the class.
The class started with 3 hours of classroom instruction, followed by 5 hours of riding exercises. I'm a bit tired, but I expect to be able to sleep well tonight.
