I suppose that, at least, the first page of each document can be set with Keep Options > Start Paragraph: On Next Odd Page. If this turns out to be the most convenient avenue available (there may be a book option, I don't know), you can script the command and insert it in the "skeleton" I posted earlier or a JavaScript equivalent to avoid having to make the change manually, if there are a lot of chapters.

Book panel flyout menu > Book Page Numbering Options > Continue on next odd page.

Now, just to be awkward, what if I don't want EVERY chapter to begin on an odd page - only certain ones?

Use "Continue from previous document." BUT you must be careful:

1. ID will only assign odd page numbers to the right page and even numbers to the left page. You can start a document on a left hand page, but ID will give it an even number. You cannot automatically number the left page with an odd number.

2. If you correctly paginate each book document (no extra blank pages at the end), and if you correctly open each book document on the next left or right page, then when you change page numbers and select "Continue from previous," ID will paginate the entire book correctly.

NOTE the last item in the Book Page Numbering Options: Automatically Update Page & Section Numbers. I advise that you not check that option if you are still adding pages. If, for some reason, you change the number of pages in the first document by an odd number, say, increasing from 16 pages to 19, then the first page of the next document will change from a right-hand page (p. 17) to a left-hand page (20), and that will wreak havoc on the layout of that document in the book, and the third document, and the fourth, and the ....
