Working on Lion now. Apple changed Interface Builder 4.1 quite radically. One of things missing, or appears to be missing: how to clipping problems. Just about the only thing I do as a localizer in Interfacer Builder is just that. In Xcode 3.2.6 this used to be CMD+K.
Another thing that's missing is the visual indication on a sheet when e.g. when a label does not fit the text. This used to be a plus sign, but currently there's no indication on by default and I could not find whether or not you could activate it.

When you select a NIB file with clipped content in Xcode 4.x, the Issue
Navigator view (usually in the left column of the Xcode main window,
indicated by the exclamation triangle symbol) will list all objects with
clipped content.
When you select an object, "Editor > Size to Fit" does what you are
looking for.

But without a keyboard shortcut. Is it?If it is, here is how you can get a keyboard shortcut. Go into System Preferences/Keyboard and click on the Keyboard Shortcuts tab.Next, go to Application Shortcuts at the bottom of the list on the left, and click to add on the + button.Then just put the menu title in, and the shortcut you want. I put a silly shortcut in here to emphasize that it's pretty flexible (shift+cmd+option+ctrl+9), so you can put what you want in place. Here's what the menu and system preferences look like for me:
