I would say I'm a WTF Paleo at the moment, thanks to my father visiting and the visits to the French Cafe for lattes and Gluten Free Cream Puffs. Lol. Planning to dial down my diet soon though as per the book "It Starts With Food" (thanks, Sean Butler) .
I make these fantastic Sweet Potato gluten free pitas in bulk that I freeze and reheat & eat with this yummy raw pastured cream cheese, or as a side to some meals. Man that's going to be hard to give up. Plus I don't know how I'm going to give up dark chocolate, black tea with stevia, the occasional largely egg-based German Pancake (only a bit of Gluten Free flour in it) with maple syrup, and the raw honey in my yogurt. I'm a sugar junkie, and these are my very last holdouts. :-(

Recipe, please. My wife is a WTF paleo, too. She makes some killer GF pancakes. I eat them a couple of times per month. She pines for the convenience of bread for making sandwiches. Are the pitas sturdy enough?

Why would you give them up? Other than the stevia. ;) I use honey if I want some sweetness. But 12oz lasts for 6 months ...
Lose the grains, vegetable oils, and concentrated sugars, and you're close enough IMO unless you've got other health issues. I mean, unless you have a need to call yourself "paleo" and be more paleo than thou with the other paleo folks you run across. LOL
I'm 80/20 paleo.
I like bread, but I'm not going to eat almond meal, gluten free bread
sweetened with agave nectar or something. Once a month or so I'll buy
proper artisan bread and enjoy it. With lots of butter and some of my
mother's homemade preserves.
I also like beer. Same thing - once a month or so, artisan micro-brewed,
unfiltered, unpasteurised.
And I'll eat cake when someone in the office has a birthday and brings
some. I'm pretty sure it's against the law to refuse free cake.

Most of that looks ok after the first Whole30, where they want you to have no added sugar for 30 days… (Though without an ingredient list it's not possible to say with confidence.)
Any idea how many grams per day you are having now? You may be in for a crash the first few days!
I use a bit of honey here and there… In tea or in homemade yogurt. But that would typically be 1/2 - 1 tsp at a shot, so 5-6g's, and that is not every day. Every now and then I might have 2 or 3 such teas...
I came across this site with a great image of a healthy intestine and a celiac intestine I mean I cannot help thinking that this plays a huge role in our aging process....poorer and poorer absorption of nutrients leading to malfunction of organs and muscles...leading to less energy...leading to less exercise leading to more atrophy... http://www.google.com/imgres?q=biopsy+intestines+celiac+disease&um=1&...
carl who will remain wheat less but will have his newpotatoes (much smaller and more skin per potato and supposedly less starchy than regular ones) now and then from now on...just what the Scandinavian people eat..dark chocolate sure...raw cheese I like...

hey gordo, how does gluten free flour work, and does white bread, or flour, have less gluten than whole wheat bread or flour......if it does, it is a lot less...i seem to have very little reaction to a small amount of white flour, but a much bigger reaction to the same if it is whole wheat...is this in my head, or is it real....thanks, el jefe

Gluten is highest in bread flour. Less processing, less gluten. Whole wheat < unbleached < bleached flour. Whole wheat has more stuff so the relative amount of gluten is lower than in white flour. You may be reacting something else in whole wheat bread.

Gordo, I want to be healthier & age well, temper some new hormonal issues (some success so far w/ the Fermented Cod Liver Oil/High Vitamin Butter Oil Blend) and lose the excess weight, besides. I already have a gluten free diet for years by default because I am Celiac (undiagnosed). I never really eat many legumes to begin with. Mostly what I eat is organic pastured meat, fish, eggs & veggies, strained raw yogurt, and now, some raw cream cheese or sour cream. Don't seem to tolerate much cheese or milk anyway so they are out as soon as I finish up what I have. I've started making a lot of chicken soup from the whole chicken & bone broths. I've cut out the grains already, for the most part, except for the flours that go into the pita and pancake making.
My problem area is sweets. I'm a bit of a junkie. The chocolate can end up being a bar a day on an indulgent day, for instance, and that is tempered from the deserts and sweets I used to indulge in. Though I've noticed when my diet is more on the side of Paleo, the sweet cravings are way less. I am sort of the opinion that sweetners are bad no matter what kind they are, and "It Starts With Food" confirms my belief. Problem is I drink a lot of tea and it's better sweetened. I guess I'll switch to herbal tea but that's a heartbreaker for me since I've been a tea drinker since I was a kid and it's so soothing.

Sean, I somewhat outlined my diet in my post to Gordo, but I've gotten the sweet monkey on my back again with my father visiting this week. Going to go back to what it was before, before I try the Whole 30, so I don't go into shock :-D
Typically what I'd been having sweet-wise before he came to visit is several cups of black tea per day with about 7 drops of stevia per cup, strained raw yogurt in the morning with a heaping tsp of raw honey mixed in and some kind of fruit (usually berries), and a half bar of dark chocolate which I have refined down to a Mast Brothers bar with no Soy Lecithin or other crap added to it. And the 1/2 pancake with lots of maple syrup on Saturdays. But that is me being very, very good. If I can do the Whole 30 I'd be very proud of myself.
