"Marco Polo descrive un ponte, pietra per pietra. - Ma qual'è la pietra che sostiene il ponte? - chiede Kublai Kan. - Il ponte non e sostenuto da questa o quella pietra, - risponde Marco, - ma dalla linea dell'arco che esse formano. Kublai Kan rimane silenzioso, riflettendo. Poi soggiunge: - Perché mi parli delle pietre? È solo dell'arco che m'importa. Polo risponde: - Senza pietre non c'è arco".

The default application to open a .dmg file in OS X is called
"DiskImageMounter" and is located in System>Library>CoreServices.
Highlight any .dmg file and Control-click on it (right-click), and
then select "Get Info" and go to "Open with:" and change this to
"DiskImageMounter" and then hit the "Change all..." button below. This
should solve your problem unless you've somehow deleted
DiskImageMounter which isn't likely because you'd need to type your
admin password before it would move to Trash or delete.

I was able to install new software double clicking any dmg file, so mounting a disk image and copying install file into applications, but since a moment when I double click a dmg file opens disk utility in order to verify the disk [listed dmg between disks availables] but does'nt mounts: also old files downloaded and in the past installed.
I guess I delete something by inadvertence ... but whath?
Any suggestion?

It would appear something is amiss with this app. If you have another
installation of the same version of OS X you can transfer a new copy
of DiskImageMounter into the appropriate folder, and then correct the
default program with a "Get Info" and "Change all..." on any .dmg file.
If you don't have a suitable copy, you can probably extract or install
one from the latest Combo Update using Pacifist.
The easy route, drag & drop a new copy from another System or backup;
the harder route, download the latest Combo Update and install the app
using Pacifist. Change the prefs and you should be ok.
