I agree with you, in saying that the Bible is not the one book to explain all of physics and natural phenomenon.
The Bible is telling the Creation story to bring across certain thesis of the Faith: that, God Created everything, and they are all good in themselves (in themselves only); Human nature is originally good until it is flawed by pride; God is all powerful, and can materialize ex nihilo; God prophecized of Mary the Mother crushing Satan through the saviour, the Word incarnate.
The Bible is not to be taken literally. It means, the Bible says God created the world in seven days, it doesn't mean that in 4004 BC September 1st, God created the world (a calculation by bishop Ussher, from the Anglican congregation). It is also nonsensical to believe that such a flood did exist. All it is saying is that God has the power to cleanse evil, and thus predicting the Baptism by water and the purification of the Jordan river.
Don't forget, the Bible is merely prophets writing "with the inspiration of the divine will". The inspiration is only transposed, when they use the limits of human comprehension and linguistics to express such divinity. There is still a great margin of inaccuracy, and never mind the myths and fables.
I also agree with you. Human is so limited comparing with the mighty of our Lord who created the universe. Human being just can't understand how God work and it always put our Lord in a difficult position in explaining things to us... Just like the father want to explain how to iterate a complex algebra to his one year old kids. Sometimes we are just stubbon enough to stick on the things we just cannot understand and still asking for an answer.

I respectfully disagree with your opinion about the Bible's veracity. I believe that it's the Holy Word of God, given to us as one means of communicating HIs love for us.
"All Scripture is God-breathed and is useful for teaching, rebuking, correcting and training in righteousness." 2 Timothy 3:16
I also believe that it is a factual account of earth and mankind's history. I believe in a literal 7-day creation and a global flood.

I find it unspeakably sad that the theory of evolution has stolen our identity from us. God spoke the rest of the universe into existence; yet he saved His very breath for Man.

I believe that Almighty God loves each and every one of us and desires intimate relationships with us. Our sin separates us from God, but He provided a bridge to span that yawning chasm.
