I think I'm going to try this challenge, but I don't think I can eat steel-cut oats everyday for a whole month. Besides fruit for breakfast (which isn't going to keep me full), any other suggestions?
There's tons of options for breakfast. One of my favorites is brown rice cereal (bobs red mill or just cooked brown rice) coconut milk (so delicious beverage) with raspberries, strawberries and bananas. Lindsay posted a brown rice breakfast recipe as well. Or a veggie stir fry, smoothies, get creative! Just because its morning doesn't mean you have to eat breakfasty foods! I'll think of more things! You read my mind! I was just thinking breakfast is going to be the "challenge" since most 'breakfast foods' like toast, bagels, cereal, waffles, english muffins etc. are processed (and I can't eat steel cut oats every day, either).
smoothies, fresh fruit and fresh juices are great breakfast foods; add in flax meal to help yourself feel "fuller" with those foods. Nuts and fresh berries are good together, too -- like this raw cobbler ( http://www.naturemoms.com/blog/2007/10/25/raw-peach-cobbler/)
Didn't the brown rice breakfast have syrup or agave in it? I thought I had read to try and stay away from them.. maybe because it's pure maple syrup, it's okay? Or the raw agave nectar? I'm very new anything remotely vegan. I've been a vegetarian for almost 2 years, but I'm really trying to go the vegan route and think this Whole Food Challenge can gear me up for it. But damn, I'm from NYC..how can I live without pizza? Sigh.

Not that it complies with the guidelines for this challenge, but there are a handful of vegan pizzerias in the city. I'm not sure which neighborhood you're from, but they're scattered around the city, so you can definitely find them if you decide to go vegan! :)

I'm from NYC too -- and 30 days without my ww bagel + tofu cream cheese and vegan pizza (from Slice) is going to be tough! I have faith I can do it with the help and support of everyone else in this with me!
Honey and raw agave nectar are permitted (in limited amounts) to make something more palatable, but it can be left off in the brown rice breakfast recipe. I've eaten the brown rice breakfast without syrup and it's still delicious; just needs a touch more applesauce.
I'm going to NYC this summer and Slice is on my list of places to hit (along with Candle 76 and Red Bamboo)! What is your favorite pizza there?
