In case you're using a NIC with dynamically loaded firmware that's not open source (many wireless cards), you will need to have the firmware available via a usb stick or something so that the installer can load it. I think there are some unofficial netinst CDs out there that have the firmwares included.

Oh and if you choose to go with the full CDs .... most every thing you need for a standard installation is going to be on the first CD, they are sorted by use, and you can always apt-get the more obscure stuff once you're done.
With debian I always install the minimum possible during the installation and then add whatever I need with apt-get ... just my style though.
