The (obvious) flippant reply would be - why have them on there if you
don't wish to speak to them?
However the Jabber protocol (which GMail Chat) uses supports the
per-user invisibility options which you're trying to find.
Therefore, the best way to achieve what you're trying to get is for
one of you (yourself or the bf) to download and run a Jabber-compliant
client, which supports the per-user invisibility options and then one
of you could still use the web-based interface. I know it's a pain in
the ass, as one of you will require to have a freestanding client, but
it's probably quicker than requesting from Google something that'll
probably take the great Juggernaut in the Sky about 10 years to
implement.
