In would be usefull to have an app that allows to change the subject
of an email.

Now you're on to my favourite subject! That being the subject of the email. I want to be able to add my own note to each email so that I know what it's really about and can find it again, not what subject line the sender has given it which is often repeated again and again with replies, and is eventually way off the subject.
