I will just chime in with a "me too" for making this a
defaultable option.

it doesn't change my message. Actually, this happens
quite often.
If I could just set a default that all mails will be
read and written in plain text font, this would be
great! Any text/plain attachment *should* be displayed
this way anyways...this isn't text/html and it's not
text/flowed so plain text was, is, and always should be
displayed with a fixed-width font.

Me too wants to be able to make it default and not per message switch.
Agree, viewing code or server log reports is a pain without fixed
width fonts. And it is an annoyingly repetitive task to select from
the drop down menu when you have large amounts of massages to plough
through.
I really hope to see this feature properly integrated into Gmail.
