Sorry for not paying attention until now, but I have some plugins for gitit like one for LaTeX. I generate SVG because it rescales. In the past, SVG has been kinda second-class for gitit since the security problems aren't understood. If you can read small haskell programs and don't intimidate easily, you should be able to modify the plugins to not use SVG if you need to do that.

The plugins are up on github at g...@github.com:wagle/gitit-plugins.git. Thee code quality is "needs polishing", but I've been using them on a daily basis for a couple years for a person journal/wiki, so I think they are robust.

The LaTeX plugin is the one named "LaTeX.hs".
