    cabal install cabal-dev
    git clone github.com/jgm/gitit
    cd gitit
    cabal-dev install
    cabal-dev/bin/gitit  # <- this is your executable

Does anyone have advice about how to install  gitit + Haskell platform + whatever else is needed

rvm software for ruby applications, and I would like something similar, which would make it easy for me to nuke the whole thing without compromising the rest of my system.

Sorry, I didn't cover how to install Haskell Platform.  For that, follow instructions on the Haskell Platform site. There's a binary installer for OS X.  There is a script installed that will uninstall the platform for you later if you want to do that.
