Participating organizations are the 10 Open source projects that will be
named on November 12th.

For example, the organizations that participated last year can be found at:
http://www.google-melange.com/gci/accepted_orgs/google/gci2011

The participating organizations will assign mentors to each of the tasks.
 Mentors will be responsible for watching over multiple tasks.

No, the mentors are attached to each task. They are assigned by the
participating mentoring organizations, not by you the students.

Mentors are there to help if you have a question about the task and to
decide whether you have successfully completed the task. Basically they
will decide if you need to do more work on the task or if it is complete
and then they will mark the task as complete and you can go about claiming
another task.
