Tartare de saumon..
On s'en est fait un hier pour des amis qui ont apprécié.
Moitié moité de saumon fumé et de saumon cuit. Le tout travaillé à peu
près comme Bernard.
Ensuite, du fenouil coupé en julienne, puis braisé/confit. Puis un petit
peu de crème fraîche safranée.
Dressage dans les cercles, avec le fenouil dessous.
