You can cook them the same as chard. i have not done it myself, but
enjoyed beet leaves cooked by my brother's mother in low, one of the best
cooks i know.

I usually just dig around them a bit and check out the size of the top of
the beet if you dig gently you can pull the large ones loosen the soil and
put the smaller ones back in the ground to continue growing.Tony
