Forgive me if I am overlooking something really obvious, but is there
a way to format text as a list? (bullet, number, etc) I am not seeing
that anywhere.

There is no special commands for a list.

Use the Characters palette (bottom of Text menu) to pick out something
for the bullet-character (it is unicode so there are thousands to
choose from) then type your list into a text box, or maybe draw
something like a solid black circle or diamond (look on Charting tools
for other ideas and shapes) for the bullet and put it to the left of a
text box.

You can put all of the list in one text box and use Text -> Paragraph -
> Form to set up indents and double spacing ...

Or organize each text item of the list in individual text boxes, this
is best I think. Then use Align and distribute for positioning. Much
more freedom to place elements as needed.

So - it is more for you create and design rather than going with a
more limited canned "word-processor" look.
