Need some help with green beans

I grew up in the South, where green beans were cooked for hours with
fatback. I didn't particularly care for the texture (soggy, ugh), so
I really haven't cooked a lot of green beans since. Now, got some in
my CSA basket, and they're aging in the crisper.

Anyone have green bean tips and/or recipes? Anything I could do with
them as a main dish?

I love green beans. But I love them with some bite to them, especially when they're so fresh and tasty. I'd roast them at high heat with a little salt and olive oil, 'til they're a little brown and crispy. Yum! For a main dish, they'd be great that way served with some crisp, crumbled bacon and a nice, runny egg over the top. Oooh! Now I want green beans!

I don't have a green bean main dish, but a great and easy way to cook green beans is to brown them lightly in vegetable oil and fresh garlic. ( I usually just slice the garlic so that the slices can be removed before serving, otherwise they can be a little over powering.

I also like to saute them with orange zest and garlic on the stove.
Add some sliced almonds for texture too.

I have a great recipe for green beans! It's from Quick Vegetarian
Pleasures by Jeanne Lemlin (One of my most used cookbooks!) I often
serve it for Easter or at summer barbecues. Hope this helps!

Green Bean Salad with Lemon, Dill, and Feta Cheese
1 lb. green beans, tips removed
3 tbsp. olive oil
2 tbsp. fresh lemon juice
fresh ground pepper to taste
2 tbsp minced fresh dill or 1 tsp. dried dill
3 tbsp. slivered red onion
1/4 c. crumbled feta

Steam green beans until crisp tender, then rinse under cold running
water until cold throughout. Drain well and pat dry with paper or
cotton towel.
Combine next three ingredients in a serving bowl. Stir in green beans
and toss. Sprinkle on dill and onion and toss again. Let sit 30
minutes, or cover and chill for up to 4 hours. Serve at room temp.
Toss just before serving, sprinkle on the feta cheese and toss again.
Taste for salt.

This is my favorite green bean recipe: http://www.cooklocal.com/?p=89

They are sauteed with sausage and hot peppers.

But the other night I just did something really simple. Steamed them,
then in a separate pot I sauteed some diced peppers (red would be best
for color), some diced tomatoes, and a little spice (I used a seasoned
salt). Then added the green beans to the pan as well as a little
butter. Heated through and served.

April, I grew up with a family that overcooked the beans, too. My granny cooked canned beans (which are already too darn soft) for about an hour with salt pork. I still liked them better than most of the other veggie options. I never encountered fresh green beans until I had a kitchen of my own. I loved that they're often called snap beans now, which covers all the colors and avoids the term "string" bean. (LOL)

Anyway, like most of the other responders, I love snap beans paired with garlic and citrus. I don't eat four-legged critters anymore, so bacon and salt pork are out for me, though still delicious for those who enjoy meat.

My favorite summer-time snap bean recipe is to saute a lot of minced garlic in olive oil, then add the snap beans. Stir and warm through. Add a small amount of water or broth so that the beans start to steam a little. Then add the minced zest of a lemon and finish with a little freshly ground black pepper and lemon juice. This is good warm or you can refrigerate it and enjoy it as a cold side-dish.

I knew that my CSA would never provide enough snap beans to satisfy my cravings, so I planted loads of them in my garden. Am currently harvesting about a pint a day of yellow wax and Purple Queen bush beans and Blue Lake pole beans.

Commercially grown snap beans are the top of the list for being laden with pesticides, making organically grown beans all the more fab!

We are using this summer as a test for gardening to see what grows
(our first summer in this house with this yard) and wax beans are
doing so well. We only have 4 plants though. Next summer we're
planting a bunch more. I can't wait!

Wow - lots of great ideas! I will definitely try one tonight. Will
report back on how it goes. We usually get green beans throughout the
summer, so it's great to have several options that all sound

I like them steamed gently (tender crisp) and then buttered with sea
salt and fresh ground pepper.

I was intrigued by the idea of roasted green beans, so I tried that
this evening (450 oven with olive oil and salt, 15-20 minutes). I
added a little too much salt, but that made them seem sort of like
french fries (not a bad thing in my book). Maybe these will be my CSA
"french fries" from now on.

Ended up having them as a side dish to ultrarunnergirl's warm lentil
and potato salad (also excellent). Plan to share both of these ideas
with my fellow CSAers in our weekly newsletter, and will try some more
of those green bean recipes next time. Thanks for the great ideas.

over rice. Ontop of that I put an over easy egg. What delicous and
easy meal! I roasted them at 425 till brown. They were really really
good!

I love green (or yellow) beans and I find that cold salads are a great
change. We get so used to eating things one way that sometimes it's
hard to get creative. I've come up with a few basic cold bean salad

I eat sunny side up eggs on braised greens (I add a little vinegar to
the greens at the end) pretty often.

My husband detests green beans cooked almost any other way but he does
enjoy them roasted. I think
it is because they really don't taste like green beans anymore - they
end up smoky and sweet. So definitely
try that method to see what you think.

Green beans are one of my favorite vegetables. I can eat them
southern and cooked to death, I can eat the straight out of the can
(yes, seriously, though they are better if they are warm), I like them
steamed to just tender and I like them roasted.

Oh! I just thought of an awesome green bean recipe that I have not
made for a while.

Saute green beans and raw pecans in butter until beans are just tender
and pecans have cooked a little. Add 1 oz. of bourbon and light on
fire. When the alcohol burns off, you will have some freaking awesome
green beans!!

I have a really good range hood and a fire extinguisher in the kitchen
anyway, but I'm not sure I'd do this without the fire extinguisher --
not that I've ever had a problem -- I haven't.

I'm SUPER late to this thread, have been away. But I'll pile on
anyway.

First, make sure to taste a few raw green beans. They are so fresh!
You probably don't want to eat an entire bowlful, but you might snack
away more than you think.
