Here's what I would like to do but have been unable to do within Apple's Mail
application.....

Create a "smart mailbox" that includes only mail set from me to just a single
specific person and mail sent only to me from that same single specific
person. In simple terms I want the mailbox to contain only mails sent from
Jim only to Jane and from Jane only to Jim.

The problem I'm encountering is that I frequently send mail to multi
recipients, one of whom is Jane, and Jane sends mail to multi recipients, one
of whom is me. Those are the messages I don't want included in what I'll dub
the "Jane and Jim" smart mailbox.

So, the question is, is there a way to create the appropriate filtering for
the Jane and Jim mailbox?

I'm running OS X 10.6.1 and Mail 4.1 (1076)

Just a comment ...

Back in Mail 2 on 10.4 it is sometimes possible to gain a wee bit more
filtering power by creating intermediate mailboxes and smart mailboxes,
and using

Message is in mailbox "mailbox name or smart mailbox name"
Message is not in mailbox "mailbox name"

filters. It's clumsy. And it doesn't offer not-in-smart-mailbox, which
I would hope has found its way into Mail 4.
