Is there a way to create PhotoEXIF data in a scanned photo?

I use iView Media Pro to catalog photos. It allows sorting by capture
date, which is usually what I want. However, this data seems to be
unique to digital photographs. iView shows it as "PhotoEXIF." This
classification does not exist for a scanned photo and exiftool doesn't
even see it as far as I can tell. Is there an app that can add this
field?

Doesn't provide a way to set Capture Date. It will set creation date,
but I can do that with exiftool.

In the PhotoEXIF section of iView, one of the fields is Aperture.
Exiftool -list lists aperture. That suggests "Capture Date" may be some
field that exiftool recognizes by another name.

I thought the field might be Create Date because digital photos list
that twice. However, when I tried adding "Create Date" to a scanned
image, exiftool sees it but iView doesn't see it. So, I am missing
something.

Can anybody help?

fails because it does not already exist. So, is there a way with
