Your 7100 requires 80 ns or faster SIMMs, so any of the speeds you listed
will work. There's no benefit to paying more for faster RAM, though. And
the SIMMs have to have 72 pins. Is there even such a thing as 70-pin
SIMMs?

Go find "Apple Spec 5/96" (apple software site or use a search engine) and
download it. It runs in filemaker, and will tell all you need to know.

Try GURU (Guide to RAM Upgrades) by Newer Technology, available in
info-mac archives. It's free and doesn't require Filemaker!!

7100/80 uses 72 pin SIMMs, I havn't got my copy of GURU to hand so I
can't remeber the speed. If you tell your supplier what its for they'll
give you the correct ones.
