Depends on how the PDF is made (some are essentially photos of the
pages), and whether or not it is protected, but many times you can just
click-drag to select the text (or just "Select All"), copy it, and paste
it into whatever other app you like.

If the PDF was made from a GraphicConerter

If was a Text document say created from Word. Then PDF2Office or Solid
PDF to Word. OR if you already have Acrobat, do Save As... Word Document.

Some uncomplicated files will convert OK. Others, especially if they
have tables or other formatting in them, don't usually make it through
conversion without some significant changes. You can convert to several
different file formats including word and pages at: zamzar.com.
