If you have Panther, you can do this:

1) Print and "Save As PDF" to save the HTML page to PDF.

2) Download Trapeze from
http://www.versiontracker.com/dyn/moreinfo/macosx/23095

3) Drag and drop your PDF onto Trapeze and select convert to "Plain Text"

Even though Trapeze costs money, the trial version allows you to convert
up to three pages for free, so if the web site you're interested in is
less than three pages, you're all set.

It can be a little less complicated than all that.
Select All or drag-select text.
Menubar>Safari>Services>TextEdit>New Window containing selection

TextEdit will launch (if not already running) and a new window will be
created with the selected text. Save as rtf or shift-CMD-T to make plain
text.

The best browser for saving a web page as text without HTML tags is iCab
