I want the whole album to be grouped. Do I have to cahnge all the artist
tags to "various artist" to achieve this? An easier way?

No, you don't have to change the artist tags. as long as they all have
the album tag " I Am Sam soundtrack", select "all artists" in the
"artist" column and browse to "I Am Sam soundtrack" in the "albums"
column. (make sure you have the "browse" view enabled, which you can get
by pressing cmd-B.)
You could also, in the bottom half of the window, sort by album and the
various tracks will be grouped together.

Or click in the "Search" field (top-left corner of the iTunes window)
and type part of the album title.
For example, if you type in "Sam", it'll show all tracks that have the
word "Sam" in the album title, as well as any that have "Sam" somewhere
in the title or in the artist's name, etc.
Or just click on the Album column header in the Library and iTunes will
sort by album rather than by song title (the default) or artist (which
you appear to have selected).
Alternatively, you could just create a Smart Playlist where the
criterion is the Album title (you need to do this on the Advanced tab).
