So, I went on DELL's site and checked out which compatible video cards
they sell along with those systems and I came up with this:
PCI: ATI Radeon X1550
So, I promptly ordered up a VisionTek ATI Radeon X1550 in PCI. It
works great as the only video card in the system, but not together
with the NVIDIA card. The System won't boot up with both cards in it.
Anyone know of any tricks? Do I have BIOS memory stepping on each
other?
Does anyone know of any for sure PCI video cards that will co-exist
with the NVIDIA GeForce 8500GT PCI-X?
Or, can someone recommend a triple (or quad) output PCI-X card? It
doesn't have to be a crazy gamer card, I just need to show decent
resolution on 3 24" LCD displays for regular office applications.
(they use them with other sources too)
Any suggestions would be appreciated.

You mean PCIe. PCI-X is a completely different bus.
As to your problem, there are cards out there with more than two outputs, but
they are likely to be expensive workstation graphics cards.
