Does anybody know about a Touchscreen running with
X11 and Linux ? We would prefer to use Xfree86, but
i think this implies the Touchscreen to emulate one
of the pointer devices supported by the XF86 Server.
If you know about one that does, or any (may be commercial)
Touchscreen/XServer running on Linux Platforms, please
tell me about it.

Yes there are lots of touchscreens you would be able to use with linux and evdev driver for X11. The usbtouchscreen.ko driver works for a lot of touchscreens and evdev works fine once your driver is loaded and working. I once used a 3M touchscreen and worked fine
