Does Finale have this same sort of capability?
I've heard also of Musicator having this capability to hear separate
playback of both the inputted midi file, and the notation it generates,
for comparison. but It is only available for the PC-I have a Mac- and
seems to no longer be in development-
So any one know of any music/notation programs for the Mac, preferably
-that offer this dual ability to hear the notation the program itself
generates, separate from the inputted midi file?

Rubbish.
Finale is just as good as Sibelius. I'm using it all the time, at the
moment I'm arranging the complete musical Les Miserables for a mainly wind
orchestra. It works like a breeze, once you've understood the internal
logic of the program.
Finale lets you easily toggle between playback of the MIDI data and
playback of the notes in the score.
