address rewrites when I don't want them

Hi, I'm building myself up a new mail server from scratch, and have come
across a bit of a problem: even though I don't think I'm telling it to
rewrite the to: and from: addresses, it does seem to... both sender and
recipient are rewritten to user@<fqdn of server>.

I've configured sendmail (8.14.3 from source) to use TLS (with self-
signed certificates) and allow relaying for users validated with user/
password.

Can anyone suggest where I start looking?

OK, I've got somewhere with this. It's a replacement site for one that
already exists, so I had some of the relevant DNS entries overridden in /
etc/hosts.

Can anyone recommend a concise description of this capability somewhere
on the net so I can understand it properly??
