I'd like to be able to type all my emails with a specific color font
(and some other things). Is there a way to do this?

Help > Find > Templates:

Stationery

Stationery files are templates for outgoing messages.
If you find yourself repeatedly sending the same message,
save the message as a stationery file
and send it whenever you need to,
using the "New Message With" or "Reply With" commands.
This way you don't have to copy and paste text into a message;
you can just open a pre-written message and edit it as necessary.

Options > Composing also has a "Default Stationery" setting,
in case you have one all-time favorite template.

Hmmm, interesting. Thanks. What I really want is to send all my
emails using a font different than the default with a color different
than black. I'm going to try it.

A client recently asked me for this;
the solution is:

Create stationery with a single newline in body;
select entire body (ctrl+a) and set desired attributes
(color, font, size, italic, etc.);
save stationery and use as default stationery.

Unlike other approaches which do not end in a newline,
this approach works even if you begin composing
by clicking past the end of the default message body.

You may optionally press Backspace before starting to type,
to remove the original "newline."
