Anyway to makeEudora forget I had a special folder at all and just use the
default?

For 99% of the "Is there any way to make Eudora forget..." questions, the
answer is: Remove the "Eudora Preferences" file from the "Eudora Folder" in
your "System Folder" and reenter all your settings the next time you launch
Eudora. Once the option has been set, it can't be reset without 1) removing
the Preferences file or 2) editing the Prefs file with ResEdit or a similar
tool. 1) is a pain, but 2) can have potentially disastrous effects
(especially for non-geek (the majority) users) so I don't usually reccomend
it.
