Until recently I clicked the Eudora icon to open it. Now, it keep
opening itself every two or three minutes -- usually when I'm in the
middle of doing something else. Very frustrating. Advice appreciated.

Maybe it's been set to check mail automatically at set intervals?
Special->Settings->Checking Mail: Check for mail every 'n' minutes.
To stop it, just enter '0' in the interval.
