This is adjustable--read the documentation
Art Media tools react to the layer texture.
Change the layer texture to something else.
For Pastel, try Paper-contrast. Also, you
might want to adjust your stylus
pressure sensitivity in the Wacom settings
for pastel.

Also, you'll find that using the mouse vs tablet
produces different results. That's because mouse
uses 100% pressure at all times.
