I'd like to learn more about graphics programming and I was wondering
if you could recommend a good 500-1000 page textbook for me to work
through? I have a graduate level knowledge of mathematics and
computer science, and professionally have written a JPEG decoder, an
embedded video driver (656), a visualization library (rendering
geophysical data into maps), some basic raytracing and various UI
libraries.

I'm interested mainly in learning more about geometry, animation and
rendering. Any suggestions appreciated.

Thanks,
Andrew.

My suggestions:

Geometry concentrating on algorithms:
"Geometric Tools for Computer Graphics"

http://tinyurl.com/l5xtdm

Geometry concentrating on representation:
"Curves and Surfaces for CAGD"

http://tinyurl.com/kjajg6

Photorealistic rendering using ray tracing:
"Physically Based Rendering: from Theory to Implementation"

http://tinyurl.com/nhlxef

No suggestions for a generic book, real-time rendering, or animation.
