I've used cocos2d-python and cocos2d-iPhone and they are very similar. The concepts of scenes, sprites, transitions, and actions are shared by both. Most methods are also named the same. They were written by separate people but the cocos2d-python API is very nice so I think the iPhone person was wise to copy it. So yes they are similar, and once you learn one, it will be easy to transition to the other. I'm writing my current prototypes in Python with the intention of rewriting in objc later.

Pyglet is lower level. I'd say start with cocos2d for a while.

I suppose cocos2d-iphone uses either opengl or Apple graphics calls instead. But I'm guessing on this one.
