We do not use gluten in any of our current flavors of Jelly Belly jelly beans, however, we do use corn starch in all of our jelly beans.
Our Jelly Belly jelly beans and Jelly Belly Confections Pectin, Mellocreme and Gelatin candies are gluten-free and considered safe for the celiac-sprue patient to consume.
In addition, you requested information regarding two specific areas: "The source of our 'modified food starch' and which 'natural flavors and artificial flavorings' are used in our products."
In regard to the source of our "modified food starch," we use corn. Our "natural flavors" are identified on all packaging, and include fruit juice concentrates, fruit purees, coffee, peanut butter, chocolate, coconut and cocoa powder. We also use oil of peppermint, lemon, lime and tangerine oils to flavor Jelly Belly beans featuring those particular flavors.
These products contain gluten and must be avoided:
All of our Jelly Belly Confections Chocolate Malt Balls, Licorice Pastels, Licorice Bridge Mix, Dimples, Christmas Dimples, Deluxe Christmas Mix, and Speckled Chocolate Malted Eggs.
So all the flavors of the jelly beans are gluten free. I thought that the buttered toast thingy was just a rumor.

My understanding is that we could use the current food labels to guide us in
making safe choices, however, they tend to list "wheat", not gluten. Can
we assume that if the allergens list does not mention "wheat, oats, barley
or rye" that it's safe? Why wouldn't they list "gluten" in the allergen
section since that's my understanding of the true enemy?

Hi Bev,
I just saw your entry and thought I’d give a suggestion. Have you ever read the gluten free bible? It’s by Jax Peters Lowell. It came out in 2005. I was diagnosed in July of that year and my daughter brought it to me right after I got home from the hospital. She’s funny and writes well. It was a huge help to me to learn how to navigate my way in eating differently and handling it when in public. She emphasizes that things were current when she wrote the book but, things always change as we all know, and it’s important to keep asking questions.
I’ve seen that on amazon there are some ‘reviews’ for the book that say she didn’t say things well, like, ‘it’s no big deal to just take the bread off of a sandwich”. That just proves the person didn’t read the book because she is very specific about how to handle gluten. (Other people told her that.) I bought different wooden spoons so they wouldn’t have gluten on them because of her suggestion. Some day I’ll take the time to write my own review on amazon.
The labels only mention wheat because the labeling law specified only the most common allergens would be included, like dairy, soy, nuts. etc. Other publications I get that are helpful in learning and keeping up to date are the magazines Living Without and Gluten Free Living. Also, I belong to the Celiac Disease Foundation www.celiac.org and Gluten Intolerance Group www.gluten.net both of which have quarterly publications.
